At this point, the wort is boiling. Turn down the stove so it doesn't boil over, and boil for 55 minutes:



Put the finishing hops in a mesh bag:



For the last 5 minutes of the boil, put the bag of hops in the wort:



When 55 minutes are up, pour the wort into a primary fermenter. We are using a 7.5 gallon white plastic bucket:



Cool down the wort with an ice bath:



Use blue ice, regular ice, whatever you have. We want to cool it down as quickly as possible so that when the water is added it will be as close to 70 degrees as we can get it. It is easier to cool down the wort if you cool the hot wort first, before adding the water.
