Double Smoked Game Hens With Basil Pasta and Asparagus

Here is a romantic dinner for two that you can cook on a bar-b-que. There are two kinds of wood smoke involved. This recipe uses mesquite smoking chips and a cedar plank. The cedar plank both protects the breast from drying out, and also adds a smokey flavor. I used chips from W W Wood, Inc., but any should do. The cedar planks were from Pacific Northwest Fine Wood Products, P.O. 935, Belfair, WA 98528, (800) 881-1747. They are about 1/4 inch thick.

Soak both the cedar plank and the mesquite chips in water for an hour. Place the mesquite chips in a tinfoil pan in the bar-b-que like so:



Place 2 game hens side by side on a cedar plank over the mesquite chips:





Cook until 180 degrees at the deepest, coolest point, with the breasts down:







Put a dab of butter in a pan:



Add the amount of whole wheat pasta you wish. This pasta was cooked with a teaspoon of salt in the water, so no additional salt was needed in the dish:



Cover 2/3 thinly with dry basil, cover that with parmesan cheese:



Stir it all up:



Steam up some asparagus:
