Carol Ann's Carrot Cake

preheat oven to 350
prepare 2 round layer cake pans or sheet cake pan

The Cake:
1/2 C. vegetable oil
2 C sugar
4 eggs
2 C flour
1 t salt
2 t cinnamon
2 t baking powder
2 C grated carrots
1 small can crushed pineapple
1/2 C chopped pecans

mix oil, sugar and eggs well. Combine dry ingredients and add to wet mixture. Add carrots,
pineapple and pecans. Stir well to combine.

Bake 45-60 minutes at 350.

Cream Cheese Frosting:
1 lb powdered sugar
1/2 cup butter
8 oz cream cheese
1 T vanilla

This rich and substantial cake is the traditional birthday cake for my brother and me. It is beloved over all foods, even cheeseburgers and oysters! The night of my sixth birthday, my brother snuck into the kitchen while everyone else was sleeping and ate all of the leftover cake. It made him very ill. What a waste! Our mom was indulgent enough to let us eat leftover cake for breakfast the day after our birthdays, but no cake for breakfast that year!
