Guacaflats

Guacaflats are a GoldLoaf.com invention. They are quick and easy to prepare, and taste fabulous. Cook a chicken in a pot for half a day until the meat falls off the bone. Really, you can use any chicken for that matter, or perhaps some pork that is on sale. Put the chicken in the fridge until you are ready to start preparing the meal. When you are ready, heat up a tablespoon of olive oil in a pan, and put the chicken in. Season the chicken to taste. We use Johnny's seasoning salt:



Take some soft flat bread, grate some cheddar cheese on top, and put in the oven at 250 degrees until the cheese melts. We used a pizza pan with holes in the bottom. We found the flat bread at Trader Joes, but there are certainly a lot of sources for this. Tortillas would probably work fine too.



Slice up some tomato. This can be done ahead of time as well. With a 250 degree oven, there is a lot of leeway on when the final assembly is. We used guacamole that came in bags from Trader Joes:



Put the chicken on top of the cheesy flat bread, spread guacamole over the chicken, put tomato over that, and top with salsa:
