 One skillet meals that don't take precise measurement or attention are my favorite kind to cook. Just to give you an idea about how bad this has gotten for me, my New Years resolution for 2006 is to cook something from a recipe each month. Now, I do most of the cooking in our household, so this would seem to be easy for me, but it is not. Fancy simply isn't a priority for me. I certainly enjoy a nice souffle', but I'm not inclined to make it myself. On to the meal! Take some pork "they better be on sale, or why are you cooking with them?" loins and place them in a cast iron skillet on medium heat:
When the pork loins are cooked on one side, flip them over and smother with chopped onion:
When the pork loins are cooked on the other side, flip them over again, let the onions settle to the bottom to brown a little, and put chopped kale on top:
After the kale has become soft, put a mound of rice in the center. Add salt and pepper to taste:
Turn the heat down to low/warm until you are ready to serve. Here is how I presented the meal:
